JOB SUMMARY

The Corporate Director of Food and Beverage is responsible for driving portfolio-wide food and beverage strategy, operational excellence, financial performance, brand alignment (where applicable), and guest experience standards. This role partners closely with hotel General Managers, Executive Chefs, property-level F&B leaders, and corporate support teams to ensure consistent execution, innovation, and profitability across all outlets, including restaurants, bars, banquets, catering, and resort amenities.

Primary duties consist of performing office or non-manual work directly related to management or general business operations. Work includes the exercise of discretion and independent judgment with respect to matters of significance.

ESSENTIAL JOB FUNCTIONS

  • Accountable for total Food & Beverage revenue and profitability performance across the portfolio, ensuring strong contribution to overall hotel financial results and TrevPAR optimization.
  • Drives financial performance through strategic budgeting, forecasting, pricing strategy, and disciplined P&L oversight.
  • Protects and enhances F&B margins through cost management, labor optimization, purchasing controls, and strategic vendor partnerships.
  • Analyzes financial and operational performance metrics and implements corrective action plans to achieve or exceed established goals.
  • Leads portfolio-wide seasonal planning, aligning property initiatives with corporate strategy, financial objectives, and market positioning.
  • Partners with Operations and Sales leadership to drive achievement of portfolio scorecard Key Performance Indicators (KPIs) and cross-functional performance goals.
  • Serves as the Food & Beverage strategic lead during property transitions, renovations, repositionings, and capital projects.
  • Oversees portfolio-wide menu strategy and service concept development, ensuring alignment with brand standards where applicable.
  • Provides oversight of Food & Beverage positioning, branding, and execution of corporate initiatives to ensure consistent portfolio-wide alignment.
  • Conducts property tastings, operational audits, and quality evaluations to ensure consistency and excellence.
  • Identifies and executes innovative revenue-generating initiatives to enhance total hotel performance and increase local market capture.
  • Leads communication and relationship management with key stakeholders, including ownership groups, boards, and executive committees, delivering presentations and strategic updates as required.
  • Maintains a professional appearance in accordance with Company standards; wears the appropriate uniform or attire.
  • Maintains open and effective communication with team members and management.
  • Attends and participates in team meetings.
  • Adheres to established safety and emergency procedures and protocols, this includes Company, federal, and state specific regulations and guidelines.
  • Completes all required Company training/compliance courses as assigned.
  • Adheres to Company standards and maintains compliance with all policies and procedures.
  • Performs other related duties and responsibilities as assigned.

EDUCATION

  • Bachelor's degree from an accredited university or equivalent in related field.

EXPERIENCE

  • A minimum two (2) years of progressive leadership experience in related field required.
  • A minimum five (5) years of supervisory experience in the hospitality/hotel industry required.

SUPERVISORY RESPONSIBILITIES

This position does not include any supervisory responsibilities.

LICENSES & CERTIFICATIONS

  • Food Handler's Card - must obtain as required by applicable state or local regulations.
  • Alcohol Awareness Training Certification - must obtain as required by applicable state or local regulations.

This position requires the capability to understand and follow both oral and written directions, as well as the ability to communicate effectively with others in English and interact successfully with internal and external customers.

  • Comprehensive culinary knowledge, including regional and international cuisine trends and evolving guest preferences.
  • Strong knowledge of wine, spirits, and beverage program development.
  • Deep operational expertise across both front-of-house and back-of-house environments.
  • Advanced understanding of F&B operational metrics, including COGS, labor management, sales metrics, KPIs to measure operational outcomes, and P&L analysis.
  • Strong understanding of financial concepts, budgeting, and forecasting.
  • Demonstrated ability to develop and execute portfolio-wide Food & Beverage strategies that drive revenue growth and operational consistency.
  • Ability to standardize processes and drive consistency across multiple properties while respecting individual market positioning.
  • Proven success negotiating and managing vendor contracts to optimize quality, cost, and service levels.
  • Strong vendor management and contract negotiation experience with proven ability to drive value and cost efficiencies at scale.
  • Ability to present financial performance and strategic initiatives to ownership groups and senior leadership.
  • Skilled in leading change initiatives and influencing cross-functional teams to implement best practices and performance improvements.
  • Strong understanding of revenue strategy, pricing models, outlet positioning, and demand segmentation within hotel and resort environments.
  • Experience in developing and repositioning restaurant and bar concepts to enhance guest experience, revenue generation, profitability, and market competitiveness.
  • Proficient in time management; the ability to effectively organize and manage multiple priorities.
